Mediterranean Steak Pita Wraps with Mint Yogurt Sauce

- 1 lb. flank steak
- 2 large pita breads (or 4 small pitas)
- 1/4 cup lemon hummus
- 1/2 cup fresh tomato, diced
- 1/4 cup fresh parsley, stems removed, leaves chopped
- Hot sauce (optional garnish)
For the Yogurt Marinade:
- 1 cup plain yogurt, low fat
- 1 Tablespoon honey
- 1 Tablespoon fresh mint, chopped
- 2 Tablespoons olive oil
- Salt and pepper to taste (for steak)
For the Mint Yogurt Sauce:

- 3 Tablespoons fresh mint, chopped

Instructions:
- Place the flank steak on a large platter and season each side generously with a pinch of salt and freshly cracked pepper.
- In a large resealable plastic bag, combine all the marinade ingredients: 1 cup plain yogurt, honey, chopped mint, and olive oil. Add the seasoned flank steak to the bag, seal tightly, and gently massage the bag to ensure the steak is fully coated with the marinade. Refrigerate for at least 2 hours, or ideally, overnight for maximum flavor and tenderness.
- When you are ready to assemble your pitas, preheat your grill for 5 minutes over high heat. Then, reduce the heat to medium and carefully place the marinated steak on the grill. Close the grill lid and cook for approximately 10 minutes.
- Using tongs, flip the steak and continue to cook for another 5-10 minutes, or until the steak reaches your desired internal temperature. For medium-rare, aim for 130-135°F; for medium, target 135-140°F.
- While the steak is cooking, lay your 2 large pita breads (or 4 small ones) on a large cutting board or serving platter. Evenly spread the lemon hummus on one side of each pita and set them aside.
- Once the steak is cooked, remove it from the grill and let it rest for a few minutes before slicing. To ensure the steak is as tender as possible, always cut it diagonally against the grain into thin strips.
- Arrange half of the sliced steak on top of the lemon hummus spread on each pita. Drizzle a generous amount of the prepared mint yogurt sauce over the steak. Finally, garnish with fresh diced tomatoes and chopped parsley. If you enjoy a little heat, add a dash of hot sauce before serving.
Notes:
- This recipe yields enough steak for two substantial large pita wraps (as shown in the pictures) or four smaller, thicker pita wraps.
- For an extra zing and a touch of heat, I highly recommend adding a few drops of your favorite hot sauce to the finished pita wrap.
- If you happen to have some tabbouleh on hand, it makes an excellent substitute for the fresh tomato and parsley, adding even more authentic Mediterranean flavor to these pita sandwiches.
