Creamy Chicken and Potato Soup Without Heavy Cream

This Creamy Chicken and Potato Soup achieves a rich, comforting texture without a heavy pour of cream or rendered bacon fat. Instead, a portion of the cooked potatoes is blended back into the broth, which thickens the soup naturally. A small splash of Dijon mustard and fresh lemon juice brightens each bowl so it never feels heavy. The recipe cooks in one pot and takes about 55 minutes from start to finish.

This is not the usual clear chicken soup. The technique here trades heavy dairy for potato purée to create body: after simmering, you blend a portion of the potatoes and broth until smooth and return that purée to the pot. The result is thick and comforting, yet still light enough to enjoy any night of the week. Poaching the chicken breasts directly in the broth with the potatoes keeps the process truly one-pot and minimizes cleanup. From prep to bowl is under an hour and most of that time is hands-off.

Why This Chicken and Potato Soup Works

Julia, author of A Cedar Spoon.

Many creamy chicken potato soups rely on heavy cream or cream cheese for richness. This version uses the potatoes themselves as the thickening agent: ladle out a couple of cups of the cooking liquid with lots of potatoes, purée them smooth, and stir that back into the pot. You only need about a cup of half-and-half at the end to lend silkiness, keeping the soup indulgent without weighing it down.

Because the chicken poaches right in the broth with the vegetables, there’s no separate pan to wash and no extra steps to brown or roast meat. The flavors marry as the soup simmers, and the shredded chicken is tender and easy to fold back into the finished soup.

Recipe Ingredients

For exact ingredient amounts and full instructions, see the recipe card below. The list here highlights the key components and why they matter.

Chicken and Potato Soup Recipe Ingredients
  • Chicken breasts: Boneless, skinless breasts poach in the broth and shred easily. Boneless thighs can be used for a richer flavor.
  • Onion, carrots, celery: Classic aromatic trio; dice evenly so they soften uniformly.
  • Chicken broth: Low-sodium or homemade gives you control over seasoning, since mustard and lemon add tang late in the process.
  • Yukon Gold potatoes: Their creamy texture makes the blended portion smooth without becoming grainy. Russets work but can break down more quickly.
  • Fresh thyme and bay leaf: Thyme adds subtle earthiness; bay leaf deepens the background savory notes.
  • Dijon mustard: Adds depth and rounds the richness without imparting a mustard-forward flavor.
  • Half-and-half: Finishes the soup with silkiness; whole milk will thin it slightly and heavy cream will thicken it further.
  • Fresh lemon juice: Stirred in at the end to brighten the flavors and prevent the soup from tasting flat.

Ways to Modify

  • Use chicken thighs: For more flavor and a slightly fattier mouthfeel, substitute boneless, skinless thighs.
  • Dairy-free: Swap butter for olive oil and use full-fat coconut milk or a dairy-free creamer in place of half-and-half. The blended potatoes still lend creaminess.
  • Lighten it: Use whole milk instead of half-and-half for a lighter finish.
  • Make it richer: Replace half-and-half with heavy cream for more indulgence.
  • Add vegetables: Fold in frozen peas or corn in the final minutes for color and texture.
  • Use rotisserie chicken: If using pre-cooked chicken, add about 3 cups shredded at the end and use the full broth amount while simmering.
  • Swap the potato: Russets will work but may yield a slightly grainier purée.
  • Boost herbs: A pinch of dried rosemary or a handful of chopped dill complements thyme nicely.

How to Make Chicken and Potato Soup

Step 1. Soften the vegetables. Melt butter in a large pot or Dutch oven over medium heat. Add diced onion, sliced carrots, and sliced celery. Cook, stirring occasionally, until vegetables begin to soften and the onion is translucent at the edges, about 5–6 minutes.

Step 2. Build the base. Add minced garlic and cook until fragrant, about 30 seconds. Sprinkle in the flour and stir constantly for one minute to cook the raw flour taste. Slowly pour in chicken broth while scraping the bottom of the pot so the flour dissolves evenly.

Chicken and Potato Soup Simmering

Step 3. Simmer chicken and potatoes together. Add cubed potatoes, chicken breasts, fresh thyme, a bay leaf, salt, and pepper. Bring to a boil, then reduce heat to medium-low. Partially cover and simmer until the chicken is opaque and reaches 165°F, about 12–15 minutes, and the potatoes are fork-tender.

Step 4. Shred the chicken. Remove the chicken to a cutting board and shred into bite-size pieces with two forks. If the potatoes need more time, simmer until tender before proceeding.

Step 5. Blend for creaminess. Ladle roughly 2 cups of the soup into a heatproof container, aiming to scoop mostly potatoes and some broth. Purée with an immersion blender until smooth, then stir the purée back into the pot. This gives the soup its velvety body without heavy cream.

Step 6. Finish the soup. Reduce heat to low. Stir in Dijon mustard and half-and-half, then return the shredded chicken to the pot and warm through for 2–3 minutes. Keep the heat low to avoid curdling the dairy.

Step 7. Brighten and season. Remove and discard the bay leaf. Stir in fresh lemon juice, taste, and adjust salt and pepper. Serve in bowls topped with fresh thyme and a crack of black pepper. If desired, garnish with fresh parsley.

Recipe Tip: If the soup thickens as it sits, stir in a splash of warm broth over low heat to loosen it.

Storage and Reheating

  • Store leftovers in an airtight container in the refrigerator for 3–4 days. Reheat gently over low heat on the stovetop, stirring occasionally. If the soup has thickened, add a little broth or milk while reheating.
  • You can freeze this soup, but for the best texture freeze before adding the half-and-half and stir the dairy in after reheating. Dairy can become slightly grainy after freezing and thawing.

What to Serve With It

  • A crusty loaf of bread is perfect for dipping.
  • A simple lemony arugula salad pairs well to cut the richness.
  • For a heartier meal, serve alongside a Mediterranean quinoa salad or roasted vegetables to round out the plate.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 5 cups low-sodium chicken broth
  • 1 1/2 pounds Yukon Gold potatoes, cubed
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper, plus more for serving
  • 1 teaspoon Dijon mustard
  • 1 cup half-and-half
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, for garnish

Instructions

  • Melt butter in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook 5–6 minutes, stirring occasionally, until vegetables begin to soften.
  • Add garlic and cook 30 seconds until fragrant. Sprinkle flour over the vegetables and cook 1 minute, stirring constantly. Gradually pour in chicken broth, stirring to incorporate the flour and scraping the bottom of the pot.
  • Add potatoes, chicken breasts, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat to medium-low. Partially cover and simmer 12–15 minutes, or until chicken reaches 165°F and potatoes are tender.
  • Transfer chicken to a cutting board and shred into bite-size pieces. If potatoes need more time, simmer a few minutes longer.
  • Ladle about 2 cups of soup into a heatproof container, getting mostly potatoes and some broth. Purée until smooth with an immersion blender, then stir purée back into the pot.
  • Reduce heat to low. Stir in Dijon and half-and-half. Return shredded chicken to the pot and warm 2–3 minutes, stirring gently. Do not boil.
  • Remove bay leaf and stir in lemon juice. Taste and adjust salt and pepper. Ladle into bowls and finish with fresh thyme and cracked black pepper. Garnish with parsley if desired.

Notes

  • Yukon Gold potatoes give the creamiest texture, but similar yellow potatoes are fine.
  • Cut potatoes to similar sizes for even cooking.
  • Whole milk can replace half-and-half for a lighter soup; heavy cream for a richer one.
  • Fresh thyme is best, but ½ teaspoon dried thyme works in a pinch.
  • Store leftovers refrigerated up to 3–4 days and reheat gently over low heat.
