Ingredients 

  • 1 Boston lettuce , {Bibb lettuce}
  • 2 Tablespoons olive oil
  • 1 pound ground turkey, cooked
  • 1/4 sweet onion, chopped
  • 2 garlic cloves, chopped
  • 1/2 red pepper, {or pepper of your choice}
  • 1 – 15 oz black beans, drained and rinsed
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper , {cayenne pepper} {more or less depending on spiciness desired}
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup cilantro, chopped
  • 3 green onions, chopped
  • Salsa of your choice
  • Cheese
  • Sour cream , or Greek yogurt
  • Jalapeños, chopped

Instructions 

  • In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until it is beautifully browned, typically about 4-5 minutes. Once the turkey is cooked, add the chopped sweet onion, minced garlic, and diced red pepper to the skillet. Sauté these vegetables for another 4-5 minutes, or until the onion becomes translucent and tender, infusing the turkey with their aromatic flavors.
  • Next, stir in the drained and rinsed black beans, along with the generous seasonings: cumin, paprika, red pepper (or cayenne pepper for an extra kick, adjust according to your desired spiciness), and chili powder. Mix everything thoroughly to ensure the spices are evenly distributed, coating the turkey and vegetables. Continue to cook for an additional 3-4 minutes, allowing the flavors to meld and deepen.
  • Remove the skillet from the heat. Now, stir in the fresh, chopped cilantro and the vibrant chopped green onions.
